Coming to the food, this doesn’t fail with its intriguing mix of traditional traveller’s fare and new –age cooking. Chef de cuisine, Mayank Tiwari shares his unique take on modern day bistro comfort food. The vegetarians would love the ‘Roasted Beetroot, Ricotta, Arugula and Candied Walnut Salad’ and ‘Roast Almond and Creamed Spinach Ravioli’. Recommendations go all out for the homemade crusty granary breads. Wholesome sandwiches, juicy burgers, delicate broths, Wood-fired pizzas ‘The Carnivore on a Thin Crust Pizza’ being a must try and delicious desserts like the ‘Vanilla Panacotta served with Pink Peppercorn and Orange sauce’, ‘OB Insanity Cake Slice’…decadent to the core. 48 HOURS IN KATHMANDU

The capital of Nepal in the heart of a mountainous and snow-capped country, famed for its ancestry, magic and mysticism.

CHARMING KATHMANDU
Weaving down the road between speeding cars and beeping motorbikes as you squeeze through the narrow streets, you will be greeted by keen street hawkers and the humming throng of people on every nook and corner, while your senses go into overdrive and the dust gathers pace around you… don’t be too quick to give up on Kathmandu – you will grow into this magical mayhem as you spend a few days uncovering the city’s charms. There’s more to it than meets the intimidated eye, and a whole adventure awaits you beyond the backpacking area of Thamel.

DAY 1

7: 30 AM: BREAKFAST AT THE COFFEE SHOP
You will need a hearty breakfast before you start your day for sure. Tucked away outside the touristy track, this delectable coffee shop at Hotel Annapurna is none too traditional in its décor and has a very upbeat contemporary feel to it. The place aims to attract the well-travelled and those looking for variety, set in elegantly cosy surroundings; it offers tasty treats with distinction. Eggs remain breakfast mainstays; a cappuccino bar churns out special coffee. You can even ask for a special Nepali breakfast if you wish to go a la carte.

8:45 AM:  SWAYAMBHU MAHA CHAITYA
Arriving at the temple I saw quite a few monkeys playing around, souvenir vendors, snack wagons, and wide stairs (read 367 steps) that went straight up seemingly to heaven. As you climb the guide explains that this monastery is about 2,500 years old. One does get breathless on the way, but you can stop for a refreshment or rest. When you reach the top you are rewarded with stunning bird’s eye view of Kathmandu below and a whole village of old buildings, temples, holy stupas, and souvenir shops at the top. Housing Buddhist and Hindu relics, typically the ashes of deceased, this temple is used as a place of meditation. Souvenir vendors have stalls side by side all around the village. A lot of them have the usual tourist items, but several had things I actually considered purchasing like the prayer wheels and well-done acrylic paintings of the Himalayas. I explored around the whole monastery taking in the wafts of incense, hypnotic chants of prayers and surreal sounds of ringing bells for about an hour before heading back down. A good is to stop over for some tea and momo’s before you head to the next stop.

11: 30 AM: HANUMAN DHOKA DURBAR SQUARE
This holds the structure that gave the city its name; Durbar Square, has been alive and in use by locals for over a thousand years. Entering the square, right in front is a huge pagoda style temple sitting on top of a series of large stone steps. All around the temple people sit on these steps watching the fruit sellers, singers, touts and tourists going about their business. Given the number of tourists in the square it comes as no surprise that there were people trying to sell little trinkets everywhere. You can also witness a living goddess here who is a pre-pubescent girl considered to be the earthly manifestation of divine female energy, and an incarnation of the goddess known as Taleju, the Nepalese name for Durga. There are specific timings she comes out, so make sure you visit the square around that time. The kneeling figure of Hanuman, sits on a tall stone pedestal. To the right is the golden main door of the HD Palace, guarded by a pair of stone lions. This museum is worth exploring, unfortunately, no photos are allowed while inside.

6:00 PM: THAMEL
Thamel has been referred to as the ‘ghetto’ by some; that said most low-budget travellers consider it a tourist haven. The narrow streets are choked with rickshaws, taxis, motorbikes and humanity. All the shopping alleys with countless shops selling the famous local Pashmina, Yak, Jacquard and Cashmere shawls, are interlinked and I could never guess what is coming out at the next turn. Little temples and stupas are well hidden too at the back streets. It is more of a backpacker area wall to wall with cafes, restaurants, pubs, travel agents, foreign money exchange booths and budget hotels with tons of camping and mountaineering gear shops including pirated North Face products. A good idea is to end your day with a local meal at one of the cafes out here.

DAY 2

9: 00 AM: BOUDHANATH STUPA
As I stepped in, I saw throngs of pilgrims walking around the stupa in a clockwise direction. Apart from its sheer size and magnificence, this vast stupa is the epicentre of so much devotion - one can't help but be overwhelmed by it I too got swept up with the crowds and joined them in this religious procession of some sort. Some locals come here to hang out as well. I settled for Breakfast at the Roadhouse Cafe and enjoyed the Stupa from a higher vantage point.

11: 30 AM: BHAKTAPUR
The town itself is an old imperial city full of interesting sights, and Durbar Square is situated just outside the town (Nepal has 3 Durbar Squares, the other two being in Kathmandu and Patan).  Many buildings out here date from the 12-15th century. Carved wood lattices and struts under the roofs are very intricate. One can get into the royal palace, through an ornate golden gate, which houses beautiful wood windows. The big royal bath in the back, where two cobra shaped statues stand is stunning. A Hindu temple inside the palace which is gorgeous is only open to Hindus. Back at the square, you can walk around and look at more temples and even shop for curios.

1: 30 PM: LUNCH AT ARNIKO
Dining at the Annapurna Hotel’s Chinese restaurant is a wonderful, wholistic experience not to be missed. First the Chinese, soup lovers, don’t miss the Traditional hot and sour chicken soup with bamboo shoots, a wholesome and tangy delight. The Cigar roll with a yak cheese filling and the Dim Sums here are a must try, they are a good representation of the quality that the kitchen upkeeps and you would love the Nepalese twist in the taste. Other recommendations including ‘Stir –fry greens’, ‘spicy pork’, ‘crispy duck with orange sauce’ etc. For a typical Oriental refreshing sweet ending go for the ‘Date rolls with ice-cream’, decadent to the core!

3:00 PM: SHOPPING ON DURBAR MARG
Just outside Hotel Annapurna is Kathmandu’s High street, aka Durbar Marg. Combining glamour with style and elegance, the place practically dignifies an entire world of high fashion. If you have the money and you don’t mind spending, this area is for you. From Zara to some spectacular local collection, this street features the extreme definition of haute couture.

4:30 PM: PATAN
Situated on a plateau across the Bagmati River Patan is eight kilometres south of Central Kathmandu, it is also known as Lalitpur aka the city of fine arts. Designated UNESCO World Heritage Site it is indeed rich in very old temples, shrines, pagodas and stupas.  It is perhaps the most picturesque collection of buildings that have been set up in such a small area. This lovely little city with its well preserved glorious heritage and the history of finest craftsmanship is a must visit.

8: 00 PM: GO LOCAL AT BHUMI
If you want to experience tranquillity, relaxation and consume local delights amidst a quaint courtyard ‘Bhumi’ is the place to have your last meal in the city! The Nepali gastronomy is characterized by its variety; as a cuisine Newari which is on offer here is designed to be shared and therefore, is very much conducive with family style service. With lungs, bone marrow as well as great sekuwa, and chwoela on offer, Bhumi goes the whole buff. The momo’s are snack size, and the presentation is great. Do try ‘Kathmandu blues’, their signature drink and yes for the less carnivorous, there is plenty on offer too like the Bara and Chatamari.

DEHLAVI CUISINE KA MAUSAM AT SHERATON DELHI'S BAYWATCH

Experience an array of mouth-watering dishes reminiscent of the cuisines prevalent in the by lanes of Saadi Dilli

If you have a head for heights, you’ll love Baywatch for its high ceiling. The restaurant brings Multi cuisine flair to the lobby level of the Hotel, with a stylish yet relaxed atmosphere overlooking the pool. The outlet is famed for hosting many food festivals and this time round it is Dehlavi, so I had to go as no other restaurant in Dilli can be credited with creating mass appeal for Dehlavi cuisine as Sheraton has.
Dehlavi cuisine, like its culture, has stood high and unmatched by any other state in India. Thanks to the capital’s chequered history and attractive Geographical location, Dilli’s culinary fabric comprises a smorgasbord of eclectic flavours and this is the cuisine where you discover what happens when artistic Communities like the Mughals, Punjabis, Marwaris and the Kayasthas, each imbue a work of art with their own unique touch.
Chef Vipul & Chef Mofid
Most of the dishes that I tried at the Buffet were outstanding owing to the use of special ingredients, carefully chosen and cooked to the right degree. The addition of certain herbs, spices, condiments or an amalgam of these rendered a unique taste and texture to each dish.

The star of the show however for me was the ‘Sarai Ki Biryani’; as I pushed open the dough ‘purdah’, a burst of fragrant steam rushed out. Inside the pot, the long-grained rice was cooked to perfection, and succulent meat simmered gently, suffusing the entire dish with its spice-smothered flavour.

Another stellar preparation was the ‘Nihari’ slow cooked mutton on a charcoal fire through the night. (Also a Ramadan speciality eaten in the morning before the fast begins). Served with warm khameeri roti, flaky leavened bread that is deep fried, and a pickle made of chopped ginger and green chillies. The rich, tender meat swam in spicy gravy laced with fat and melted in my mouth. …Majja Nu Life!! What say!!

ARTUSI RISTORANTE E BAR, DELHI

VERITABLY ITALIAN

The food is elegant while retaining the robust flavours one would expect from an Italian meal.

LOWDOWN
The decor, the ambience and the service all reflected the warmth and care that one would expect when dining in a warm and friendly Italian home that I felt at home at once. Italian food has been adulterated and generally syncretised to a significant degree. It is therefore gratifying to dine on good, authentic Italian food. The promoter Gurpinder Balcon, an Italian citizen born in India who has exceptional knowledge and passion for fine authentic Italian food (married to an Italian) from the Emilia-Romagna region, is ever ready to explain every dish on the menu with great gusto. All in all, Artusi is utterly charming, utterly homely, utterly comfortable and utterly delicious!

WHAT’S ON OFFER?
The experience at Artusi is truly Italian. We started with a Prosecco at the before with Bruschetta before moving on to dinner. The food is elegant while retaining the robust flavours one would expect from an Italian meal. In keeping with the spirit of Italian cooking, everything is fresh and the flavours are kept simple so they balance each other. Sometimes, simplicity can be the hardest thing. Chef Romina Lugaresi takes on an emotional approach to cooking. She almost takes it as a responsibility and enjoys watching people eat. The menu is grand and extensive with faultless final products. Go for the tasting menu if you want a bit of everything. If a la carte is your choice then to whet appetites, a platter of ‘Calamari Fritti’ deep fried, served with a tangy spicy red sauce, a mild and creamy white sauce and a slice of lemon set the right mood. Not to be missed also is the homemade ‘Piadina e Crescione’ a platter of selected cured meats that includes Prosciutto di Parma that has been aged for 24 months, as well as salame, mortadella, fine cheeses and herbs. The selection of risotto and soup is a must try. ‘Risotto Ortolano’ made with the highest quality Carnaroli rice and seasonal vegetables and authentic Grana Padana cheese is decadent to the core.
Pasta is made fresh every day to guarantee the best quality. Their egg less Strozzapeti (an artisanal and rustic pasta made with flour only), is best taken plain with just tomato sauce (pomodoro). Speciality dishes run a mile long and include the likes of ‘Grigliata Mista’, a platter of premium quality mixed meat cuts and sausages - served with rosemary potatoes and grilled vegetables is rich but not overwhelming. The tiramisu is the Pride and joy of the restaurant and another good bet would be the Panna Cotta.
As more and more Italian restaurants mushroom all over the country , Artusi has set itself apart by going authentic in its cooking. It is obvious that nothing is compromised here, from carefully engineered dishes, to impeccable service, the ambience is extremely European, and it definitely is a cut above the rest. The experience doesn’t end with the food but spreads on to the service, wines and the service under the Italian speaking General Manager Aman Chaudhry.

ABOUT THE CHEF
Romina Lugaresi Is the Executive Chef of the restaurant. Romina has been at the helm of kitchens in the Americas, the Caribbean, Europe, Asia and now in India. Throughout her twenty years her focus has been on the cuisine of her native land Emilia-Romagna. It does not hurt that Romina was born and grew up in the same village in Emilia-Romagna like the owners’ family! She appreciates that Artusi Ristorante e Bar does not have, nor plans to have, any other outlets. ‘I simply want to deliver the very best only, every day of the week, thus I trust my team but I also keep a close watch on every dish that leaves my kitchen’ says Romina smilingly.

COMEDIAN VIR DAS IN STRESS

An invite to meet ‘ Vir Das’ the famed Comedian at ‘Kingdom Of Dreams’ awaited in my mailbox and I sure was excited…Just like some people have a fetish for a good steak , I have one for Good Humour and off I set with my daughter in tow with great gusto.
Being a local Gurgaonniwaasi, I feel rather proud that a dream destination like Kingdom of Dreams is right here in my neighbourhood…and more often than not I have watched both the shows ‘Zangoora’ and ‘Jhumroo’ sometimes to entertain some firang friends and sometimes to simply entertain myself with the family.
SMILE PLEASE
Anyways back to ‘Vir Das’, who was actually there to promote his upcoming film ‘Amit Sahni ki List’ at the glitzy ‘IIFA’ hall at KOD. His arrival was a wee bit late but he did manage to say something about his film to the press in the speculated time. He was then whisked off to ‘Nautanki Mahal’ (with a promise to come back in 30 minutes for a one on one with the media) just as ‘Zangoora’ was ending so as to surprise the guests with his presence and of course promote the film. Fortunately or unfortunately I got to sit next to him and as I tried to get friendly so as to interview him later…he introduced me to his PR who said, ‘we will connect’ post this. Anyways all Vir asked me was ‘Do you have time on you?’ At first I thought he was flirting but soon realised he was just asking to know what the time was. I said ‘5 Pm’ and he just nodded his head stressfully. A comedian in stress…hmmm, doesn’t sound right…haina?
ON STAGE AT THE NAUTANKI MAHAL
That said on stage at the Nautanki Mahal ‘Vir Das’  the ace stand-up comedian and now Bollywood star, mingled with adoring fans and visitors at Kingdom of Dreams, who could not get enough of him. The excited crowds responded with enthusiasm and kept asking for more.
WHY THIS STRESSED LOOK???
And I rushed back to the IIFA hall so as to chit chat with him one on one! But where was ‘Vir Das’? He did not come back and left all the media stranded….We were told he had to rush to catch a flight to Singapore…Now I would call that being rather disorganised, if you have said you are available till 7:15 …didn’t you know you had a flight? Whatever!!! I sure was disappointed with Vir Das not even smiling properly when he was sitting next to me and then this disappearing act!!
With nothing really left to do, we just had some yummy ‘ Vada Pao’ and ‘ Chai’ from the Mumbai counter at KOD and took some pics with the debutant heroine Anandita who was there for a very long time with her super excited family!
DEBUTANT ANANDITA AND AKANKSHA DEAN

As far as the film is concerned I really don’t know yet if I would be watching it …but would surely come back to Kingdom of Dreams for the Vada Pao and Jhumroo!

KABAB IS KING

Huge repository of recipes, perfected over time, focusing uniquely on Indian grills

The exciting ambience of TGKF exudes vibrant colours, lively sounds and factory like distinct atmosphere which adds to the ethnic yet modern feel to the overall character of the restaurant. Also, space planning has been done keeping in mind that each guest has a view of the display kitchen which is also the focal point of the restaurant. Following the “Serving an Unlimited Dining Experience” through a unique and brand synonymous “sit in buffet” concept; the uniqueness comes with the fact that all the menu items are served to your table in a pre-decided sequential chronological order.

Kababs are straightaway served on the table with abet of specialized service gear, the table top splendour has an expressive beauty, giving the whole milieu a conventional mien. It sure   has a never-ending recipe bank (With over 350 vegetarian & non-vegetarian kabab varieties to choose from) and uses recipes combining the ancient with the contemporary. The raw materials cover the panoply of seafood, poultry, lamb and game and the freshest vegetables and uniquely unusual combinations of vegetables.
These include scallops, prawns, Pomfret, quail, lamb chops and many others – each infused with a different marinade and culminating in slow cooked Biryanis, lentils, and an extensive array of Indian breads.
The plentiful vegetarian choice includes Aubergines, Sweet Potato, Green Bananas, Jackfruit, Bell Peppers, Baby Corn and Broccoli. I enjoyed all the mouth-watering kababs prepared in several different styles. Whether, roasted on the Tandoor or on a 'Sighri', shallow-fried in a 'Tawa' or a 'Mahi Tawa', deep-fried in a 'Kadhai', steamed in pots, or even grilled on a stone, they ensured the best culinary experience. To end on a sweet note go for the exotic Jalebi with Rabri and Kulfi, (all as much as you can manage!). All is served in a precise sequence, although there are no conventional first courses or main courses which is unlimited, to be shared in a convivial fashion. The service is friendly and exciting, yet reflects traditional Indian hospitality and made me feel special. And in consonance, the best single malts with their peaty flavour match brilliantly with smoked grilled kababs.

VEGETARIANISM THE LATEST FAD

Hectic lifestyles with a bombardment of health messages sure leave most of us confused. Most of us try diets, and the latest trend now is a Vegetarian food diet and there are posh only vegetarian restaurants opening by the dozen! Transition to vegetarianism is on the rise and more and more people are worried about what they are eating and soon enough Vegetarian food consumption will boom worldwide.

DID YOU KNOW?
According to research, vegetarians tend to live longer on an average than those who eat meat-based food regularly. This is the main reason why people all around the world are becoming vegetarians. After all, herbivores are generally healthier than carnivores. This is also the reason why doctors recommend following a vegetarian diet to patients with obesity, arthritis, asthma, osteoporosis, gout, ulcers, arthritis, hypertension, allergies, gallstones, piles, colitis, kidney stones, depression, and premenstrual syndrome.

Interestingly Vegetarianism dates back to a time before recorded history. Many anthropologists believe that most early humans ate primarily plant foods, being more gatherers than hunters. While being a vegetarian isn’t for everyone (including me), I meet lots of people every day who tell me they are vegetarians or would like to become one! According to many big name industry analysts and food companies, is that vegetarian dining and a reduced level of meat consumption is a rapid growing top food trend across the world. Proof of this can be found in the grocery store. Where Heinz used to be the only vegetarian baked beans available, now there are several varieties on the shelf, from Campbell’s to store brands. On most menus throughout the US, Canada and Europe I noticed vegetarian options for those who prefer the vegetarian diet. Vegetarians believe that this diet is much healthier than the average diet, which includes animal products. Last time when I flew by Emirates to Seattle, I noticed the vegetarian meal option seemed very creative for an airplane.
The Vegetarian Mezze Platter On Emirates Business Class
At a wedding dinner I again noticed a gamut of dishes for the vegetarians and while eating in a restaurant in India, l have noticed the growing trend toward vegetarianism.
Verdure Ripiene - at Artusi, a posh Italian Restaurant in Delhi
Interestingly on a recent trip to Mumbai I stayed at the Sofitel Luxury Hotel and I was mesmerized by the splendour of classical French Heritage and the magnificence, beauty and luxury of a world-class hotel. Interestingly with The Bharat Diamond Bourse aka the world’s largest Diamond Bourse having moved to Bandra Kurla Complex, Sofitel Luxury Hotel has been smart and opened ‘Tuskers’, a Vegetarian Dining Bar especially for the selective eaters.
True to its name the restaurant is inspired by the most regal of creatures, the merciful vegetarians i.e. the Elephants. I found Tuskers to be a delicious mix of contemporary ambience echoed in the rich warm leathers, walnut chesterfields, carpets, grill works, elephant motifs and plush wood. The restaurant had on offer the choicest vegetarian fare, simmered to perfection in the most exotic spices. To complement the food, the wine cellar houses a fine repertoire of wines and the bar offers a range of exclusive and rare single malts, as well as classic cocktails.

A VEGETARIAN SAGA BY MICHELIN STAR CHEF VIKAS KHANNA
Master chef Vikas Khanna recently launched his book alongside KitchenAid’s cordless hand blender with excellent Vegetarian recipes.

‘Hymns from the Soil’ is an exquisite amalgamation of gentle, pure, heart-warming tales from a vegetarian kitchen that overflows with nature’s harvest. The recipes in the book accentuate the purity and spirituality of vegetarian food while bringing in cultural and regional nuances. This food journey is interspersed with Vikas’s own personal journey – whether it is going back to his kitchen garden in Amritsar and waiting for the cardamom to grow as a curious child or to exploring the cardamom spice farms as an adult, with the same level of excitement and enthusiasm. Hymns from the Soil offers a heartening tribute as Chef Vikas Khanna bows to Mother Earth.

CELEBRITY BYTES
Gaurav Gera
Shahid Kapoor is the winner of the title of Asia's Sexiest Vegetarian Man for 2011 after a fierce battle on PETA Asia Pacific website. Singer Faye Wong had been crowned Asia's Sexiest Vegetarian Woman.
Actor Director Deepak Tijori
Actor Director Deepak Tijori has been a vegetarian all his life, ‘I relish simple vegetarian spicy food. I love moong and masoor dal and any good dish made out of potatoes… and I make the most awesome masala rice and aloo pyaaz tamatar ki subzi’, shares Tijori.
Gaurav Gera, who is now the famed “Jhumroo” at Kingdom of Dreams is a vegetarian too and loves salads, ‘Being a pure vegetarian sometimes I don’t have too many options if Iam travelling’, jokes Gera, ‘That said, My favourite cuisine is South Indian. I often come to ‘Chennai’ at culture gully at Kingdom of Dreams for the Dosas’, he further adds.
Comedian Gurpreet Ghuggi gave up Non-vegetarian food as he thinks vegetarian food is healthier.

 ORGANICALLY VEGETARIAN
Certified organic vegetarian products are generally more expensive than their conventional counterparts; this is because the organic food supply is limited as compared to demand. Production costs for organic foods are typically higher because of greater labour input and because farmers don't produce enough of a single product to lower the overall cost. In spite of that within the last year most supermarkets began setting up organic vegetarian food sections to sell mostly locally grown organic produce including fresh vegetables, fruits, rice and tea. The popularity of organic foods can also be attributed to promotional and educational efforts conducted by local academic and environmental groups.
All in all vegetarian practices meet the need of the present without compromising the ability of future generations to meet their own needs…so GO Green…what say?

HEALTH BENEFITS OF BEING A VEGETARIAN
> Studies have shown that by following a well-balanced low-fat high-fibre vegetarian diet one would have lower incidence of coronary artery disease, hypertension, obesity and a fewer varieties of cancer.
>This diet is lower in total fat, and one consumes proportionally a lot of polyunsaturated fat to saturated fat compared with non-vegetarians.
> Look younger - The content of fibre and lycopene in fruits and vegetables can prevent wrinkles as it serves as an antioxidant that reduces the potential for skin damage caused by free radicals.
  > With a diet is full of nuts, whole grains, fresh fruits, and vegetables; one is likely to maintain a stable blood sugar level more stable. The outcome of this stability is consistent energy levels, which eventually does not bring about any fatigue feeling, especially post meals.
    > Most of the diet is capable of detoxing your body naturally.
